Left over Christmas veg soup.. how satisfying!!




SO DELISH
I just can't bare waste, even when the christmas leftovers are on their third day, there is no need to throw away such delicious veggies..
So on the third day i make my christmas soup, oh so satisfying, so easy, and just so yummy..

Every year it varies of course, depending on the amount of which veggies are left, but that doesnt matter.

INGREDIENTS:
1-2 onions
left over veggies
stock/jelly left over from the turkey
thyme
curry powder
paprika
seasoning
creme fraiche

METHOD:

Start by sauteing an onion or two in some olive oil until soft. Then add your veg, bacon bits, and really scrape those good crusty bits from the side.

Add the thyme, a spoon of curry powder and the stock, simmer for a few mins.

Liquidize, add water till the constancy is how you want it, season

Serve with a dollop of creme fraiche and a sprinkle of spanish paprika.
